Gluten Free Banana** bread

This actually turned out really well!  I made one large loaf of bread + 12 standard/medium sized "cupcakes" with these ingredients:

1/2 cup flax
1 cup rice flour
3/4 cup sorghum flour
4 eggs
4 over ripe bananas
1 medium apple (cut up and blended into "sauce")
1/3 cup coconut oil
1 tsp vanilla extract
1 cup brown sugar
1/4 tsp salt
1 tsp baking soda
1 cup spinach
1 cup swiss chard (not stems, just leafs)

Blended all together (however you like to do it...I'm bad that those types of instructions) then baked on 350 for about 40-50 minutes.  The cupcakes I took out about 10 minutes earlier than the loaf.

Buttercream frosting for the "cupcakes" was made with:

1 & 1/2 cup of organic confectioner's sugar
1/2 cup of organic raw butter
1 tsp of vanilla extract


**Banana was the main base, but I added several of other fairly healthy things like apple, swiss chard, spinach, flax seed, coconut oil, etc.
